First, we put 1 cup (120 grams) of olive oil, half a glass (122 grams) of sugar and 3 grams of ground cardamom in a blender. Then add 2.5 cups (250 grams) of chickpea flour and 0.2 grams of brewed saffron and mix well. Put the liquid in a suitable container and cover it with a bag and let it rest for one to two hours. Then we turn on the oven and set it to 150 degrees until it heats up. After that, we put the dough on a suitable surface and smooth it and mold it.

At first, we cover the oven tray with greaseproof paper and place the molded dough in it. If you don't have a mold, you can make the dough into small balls. Put pistachio slices on each dough and then put the tray in the oven for about 15 to 20 minutes. You must be careful and constantly monitor the sweets to avoid burning. Because the temperature of ovens may be different and in some cases, sweets need less time to bake. After baking, we let the cookies cool down and then put them in suitable containers. Some important tips for better preparation of chickpea cookies:* Make sure that they are not hot when moving the cookies, because the heat can cause the cookies to crumble. * Adding rice flour to the dough can help make the cookies more crispy. Therefore, you can reduce about 100 grams of chickpea flour and use rice flour instead.* Because chickpea pastry dough is usually not stiff, it may not be easy to mold it. As a result, depending on the type of flour, increase or decrease its amount. * The most important point is that the longer the pastry dough stays, the better it will cook.
