PREPARE

PREPARE
To prepare the cutlet, start with the meat. If you use chicken breast, carefully remove the fatty parts and the central bone from the whole breast (400 g). Then, with a sharp knife, cut slices of approximately 1 centimeter. Then beat them with the appropriate hammer or a meat tenderizer to soften the meat and reduce its thickness. Then transfer the slices of meat onto a plate, brush them with oil on both sides and set them aside while you continue with the preparation. In a large bowl, place the breadcrumbs. To flavor the breading, add salt and pepper and mix everything together. Now you can take the meat set aside and pass it slice by slice in the breading, pressing well with your hands to make the mixture adhere. Heat the grill well over medium heat and cook the meat for 10-15 minutes, turning it a couple of times halfway through cooking until the slices of meat are well grilled on both sides. If you prefer, you can cook the cutlet in a preheated static oven at 190° for about 15 minutes (in a fan oven 170° for about 10 minutes). The Milanese cutlet will then be ready to be served very hot. accompanied with a salad, crunchy vegetables to your taste!
