First, peel and wash 2 onions (200 grams). Then we grate it with a medium tooth and squeeze it by hand and extract its juice. Next, I put 300 grams of raw lamb thigh and 100 grams of raw lean calf thigh, which we have already ground, in a bowl, and 200 grams of grated onion, 1 teaspoon (4 grams) of salt, 1 teaspoon (2 grams) of black pepper. And we add 1 teaspoon (2 grams) of turmeric to the meat and onion mixture. We mix the ingredients well until they are completely uniform and knead the ingredients for a few minutes until they are combined (if you have enough time, you can put the barbecue sauce in the refrigerator for about an hour to have a better barbecue). Grease a suitable pan with 1 tablespoon (6 grams) of oil and put it on a low heat and pour the ingredients on the bottom of the pan and flatten it so that the diameter of the kebab is the same in all parts. Then, with a spatula, we divide it as desired and keep a distance from each other so that they do not stick to each other during cooking. We put the lid of the pan so that the kebab will drain some water. After the kebab is cooked, we turn it over so that the other side of the kebab is also cooked.
