Steps of cooking chicken and rice

Steps of cooking chicken and rice
First, we put 5 tablespoons (30 grams) of olive oil in a suitable pan on low heat, and when the oil is hot, we fry 550 grams of chicken breast in it. When the color of the chicken is golden, add 3 grams of salt and 1 teaspoon (2 grams) of turmeric to it and fry a little more. Then we add 1.5 glasses of water to it. When the water boils, reduce the heat and place it under the flame spreader pan and let the chicken cook completely on a very gentle heat. After half an hour, when the chicken is half cooked, we add 0.2 grams of brewed saffron and 10 grams of lemon juice and let the chicken cook completely. The chicken broth should not be completely dry because we need about half a glass of chicken extract to prepare the sauce. After completing these steps, we drain and brew 3 cups (480 grams) of raw rice. To boil rice, we need 3 tablespoons (18 grams) of olive oil.

making sauce

making sauce
To prepare the sauce, put 1 tablespoon (6 grams) of olive oil and 10 grams of butter on low heat in a relatively small container, fry 2 medium cloves (6 grams) of garlic and 100 grams of golden onion in oil and butter. After that, we add 2 tablespoons (36 grams) of tomato paste. When the paste is fried, at the end, we add half a teaspoon (1 gram) of black pepper along with 100 grams of chicken broth and half a glass of water. We reduce the flame completely and let it boil until it becomes thick enough. Then remove the sauce from the flame and set it aside.

last step
To prepare the barberry mixture, put 1 tablespoon (6 grams) of olive oil in a suitable container on low heat. When the oil is heated, we add 65 grams of barberry and fry very quickly and briefly. While roasting, we add 1.5 tablespoons (12 grams) of white sugar. When the sugar melts, add 0.1 grams of brewed saffron along with a tablespoon of water to the barberry and continue stirring until the roasting is finished. We must pay attention to the fact that the roasting time should be short so that the barberry does not burn.
