To prepare the chicken, first put 2 tablespoons (12 grams) of olive oil, 320 grams of chopped raw chicken breast, 100 grams of onion and a third of a cup of water in a pan on a low flame. Add half a teaspoon (2 grams) of salt, 1 teaspoon (2 grams) of turmeric and 0.2 grams of brewed saffron to the boiled water. We put the lid of the pan so that the chicken cooks slowly.

To prepare the tachin sauce, we drain 3 cups (480 grams) of rice in advance. In a large bowl, mix 1 raw egg, 150 grams of full-fat yogurt, 2 tablespoons (12 grams) of olive oil, 6 tablespoons of rose water, 2 grams of cardamom, 3 grams of salt, and 0.2 grams of infused saffron.
